Feel free to use razor clams instead. The combination with the pickled cucumber gives the dish the quality of being a Japanese amuse bouche.<\/p>\n<h2>For the pickled cucumber<\/h2>\n<p>2 \u00a0Japanese cucumbers or English cucumber<br \/>\n3\u00a0teaspoons salt<br \/>\n1\/4 cup (80 mls) \u00a0rice vinegar<br \/>\n2 tbsp sugar<br \/>\nFurther pinch of salt<br \/>\n2 tbsp sesame seeds<\/p>\n<p>Slice the cumber into moderately thin roundels. Place them into a bowl and stir in the salt. Leave the cumbers for about 30 minutes then rinse and drain them. Place them in a bowl then add the rest of the ingredients. Place them into a lidded container and leave to pickle for a few days.<\/p>\n<p><a href=\"http:\/\/surgeoninthekitchen.co.uk\/wp-content\/uploads\/2014\/09\/cool-e1410894502426.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-768 size-thumbnail\" src=\"http:\/\/surgeoninthekitchen.co.uk\/wp-content\/uploads\/2014\/09\/cool-e1410894502426-150x150.jpg\" alt=\"cool\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<h2>For the clams<\/h2>\n<p>Saut\u00e9 the clams in butter for about 30 seconds then place the clams in a small ramekin. Add a teaspoon of truffle oil and gently coat the clams by stirring gently<\/p>\n<h2>Completing the dish<\/h2>\n<p>Place a bed of diced pickled cucumber into a small receptacle such as a Chinese spoon.
